No matter how you cook it, pork and rice are just plain good!

This is a great all-in-one skillet meal — which cuts down on the cleanup!  Makes us love it even more!

Arroz Con Puerco (Pork with Rice)

Cook Time: 2 Hrs
Ready In: 2 Hrs 7 Min
Servings: 6 to 8

Ingredients:

  • 1 tablespoon vegetable oil
  • 2 pounds boneless pork loin, cut into 1-inch cubes
  • 1 tablespoon anatto oil
  • 2 tablespoons finely chopped garlic
  • 4 cups water
  • 2 cups MAHATMA rice
  • 1-1/2 cups fresh green peas

 

Directions:

  1. Heat oil in a large skillet and sauté pork until lightly browned.
  2. Add anatto oil and gently stir pork.
  3. Add garlic and sauté for two minutes.
  4. Add enough water to cover and simmer, covered, over low heat until the pork is tender, about 1-1/2 hours.
  5. Drain liquid from skillet and measure.
  6. Add enough water to make the quantity of 4 cups.
  7. Return liquid to the skillet, stir in rice and peas. Bring to a boil.
  8. Reduce heat, cover and simmer 20 minutes or until rice and peas are tender and all the liquid is absorbed.
