Salads to Go Mason Jar Salads

Today on Fox I talked all about how to plan and make super cheap Lunches, and one suggestion I had was to make a Salad In A Jar. It’s quick and can be made up to 4 days in advance.

My Mom has been making and carrying around these salads for years. It is super easy because it is self contained. No fiddling with the dressing packet, or having to add the cheese and topping like you do at a Fast Food Restaurant. Just shake and eat! Plus, there are a zillion options. You could even fill that Mason Jar with a snack of hummus and veggies.

The trick is knowing HOW to layer so that it doesn’t get all yukky. Here’s the secret:

  1. Put the Wet on the bottom: So start with your Dressing or Fruits
  2. Next add the moisture resistant Veggies such as beans, onions, corn, carrots, peppers.
  3. Then other Veggies, like mushrooms, yellow squash or zucchini
  4. Then goes your Protein, like Eggs, Chicken, Shrimp and/or Cheese
  5. Then any Grains, Pasta, or any Crunchies (like sliced Almonds)…
    but NOT CROUTONS, those have to go in the very tip top so they don’t get soggy
  6. Last is the Greens!
    Oh, and a folded paper towel on the very top if storing for longer than 24 hours just to absorb any excess moisture so the greens don’t wilt to horribly.
