How about a new twist on an old favorite?

Meatloaf is one of those wonderful comfort foods that mom made on a cold blustery day.

Mr. Food takes it one better by adding a crispy coating and frying it to a golden brown.  Add some mashed potatoes and veggies and you are all set!

Crispy Fried Meatloaf

Prep Time: 10 Min
Cook Time: 1 Hr + 5 Frying Time
Chill Time: 2 Hrs
Ready In: 3 Hrs 20 Min
Servings: 6 to 8

Ingredients:

  • 2 pounds ground beef
  • 1 1/2 cups fresh breadcrumbs
  • 2 eggs
  • 1/2 cup water
  • 2/3 cup ketchup, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder

Coating:

  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 1/2 cups Panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable oil

Directions:

  1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
  2. In a large bowl, combine beef, bread crumbs, eggs, water, 1/3 cup ketchup, 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1/2 teaspoon garlic powder; mix well.
  3. Place mixture in prepared dish and shape into loaf pan.
  4. Spread remaining ketchup over top.
  5. Bake 60 to 70 minutes, or until no longer pink in the center.
  6. Let cool, then refrigerate at least 2 hours. Slice cold meatloaf into 3/4-inch slices.
  7. To make the coating, place flour in a shallow dish; place eggs in another shallow dish and lightly beat.
  8. Combine Panko bread crumbs, salt, and pepper in a third shallow dish.
  9. Coat a slice of meatloaf on both sides with flour, then egg, and finally with bread crumbs.
  10. In a large skillet, heat oil until hot.
  11. Fry a few slices at a time 1 to 2 minutes on each side, or until golden brown.
  12. Drain on a paper towel-lined platter and serve.
