Baba was my Mother’s Polish Grandmother. I never had the fortune to meet Baba, but my mother grew up around the corner from Baba and therefore has lots of wonderful memories of her. We also have several polish recipes passed down from her kitchen!

Every year on Christmas Eve our family makes Baba’s Crab Cakes with potato salad and shrimp. This recipe is not very complicated, so you still have plenty of time to prepare it! This is a photo from 2009 of the family peeling shrimp, a treasured activity for sure!! No one is too young to be excluded from helping!

Baba’s Crab Cakes

Prep Time: 15 Min
Cook Time: 35 Min baking time in 375 oven
Servings: 12 cakes

Ingredients:

  • 1 pound crab meat (some kind of lump works the best)
  • 2 heaping TBSP of Mayonnaise
  • dash of water
  • Little over half sleeve of saltines
  • 1 egg
  • Parsley Flakes, a couple shakes
  • 1 tsp Yellow Mustard
  • Old Bay Seasoning (optional…and a bit controversial, my Mom says Baba never used this, I like to sprinkle the top of the cakes with it)

Directions:

  1. Put Saltines in a Ziploc bag, break into small pieces (do not pulverize)
  2. Mix egg, water, mayonnaise, mustard and parsley in a small bowl
  3. Put crab meat into a bowl with a large opening (a large bowl with small sides will work)
  4. Gently toss saltines with crab meat, use your hands (this is the trick to making them fluffy…do not over mix, and try to “fluff” by mixing from the bottom of the bowl with your fingers)
  5. Pour liquid over meat mixture and mix gently.
  6. Form small (around 2-3 inch) balls and place onto cookie sheet. It should make 12 cakes.  Remember, don’t over handle!
  7. Bake at 375 for 35 mins. (until they are golden brown on the outside) Can also be fried on the stove, but baking allows you to complete the potato salad. Or you could serve with the mashed potato and sweet baby carrots recipe we sent out HERE.
