Easy Mexican Casserole Recipe

Our family loves Mexican food, and this is one of our favorite Mexican recipes!  It’s easy to assemble ahead of time, so it makes a great week night meal. All you really need to add is some chips and salsa, and you have a complete meal!

 

Easy Mexican Casserole Recipe

This entire Mexican Casserole can also be assembled ahead of time and kept in the refrigerator until ready to cook.
Ingredients
  • Ground Beef 1-2 lbs
  • Taco Seasoning Mix pouch
  • Flour or Corn Tortillas (your preference), 1 package
  • Enchilada Sauce, 1 can
  • Re-fried Beans, 1 can
  • Shredded Cheese (cheddar or Mexican blend), about 2 cups
  • Black Olives, 1 can, sliced (optional)
  • Green Onion
  • Sour Cream
  • Salsa
Instructions
  1. Brown Ground Beef and prepare according to Taco Seasoning package directions.
  2. Layer ingredients into a sprayed 9×13 baking dish. You can arrange them in any order, but this is the order I use: Taco flavored ground beef, tortillas dipped in the enchilada sauce (dip each tortilla individually as you place them into the baking dish), re fried beans, seasoned ground beef, shredded cheese, tortillas dipped in enchilada sauce, more seasoned ground beef, final layer of tortillas dipped in enchilada sauce, final layer of shredded cheese, scatter black olives on top (optional).
  3. Bake in 350 degree oven about 25 minutes or until heated through and all cheese is melted on top.
  4. Can be served with chopped green onion, sour cream and salsa.
