We’re pretty picky about our guacamole. If it’s not made fresh, we don’t want it. That’s why we love this Chipotle Guacamole recipe. It’s so easy to make and our whole family gobbles it up! Once you try it, we think you’ll be picky about your guacamole too!
To make excellent guacamole, you need really fresh ingredients. It’s also important to use red onions instead of white or yellow. They are sweeter and less harsh.
First you’ll need to finely chop the jalapenos, onion and cilantro. You can do it by hand, but using a food processor will get it done much faster and make for an nice even chop.
Now you need to cut the avocado in half lengthwise and remove the pit. Once you cut it in half, hold the half that contains the pit and strike the pit with the blade of the knife so that it sticks to the knife. Then using the knife, twist and lift the pit out of the avocado. Grab a spoon and scoop out the meat of all avocado halves and transfer it to a bowl.
Mash up the avocado well, add the chopped ingredients, the lemon and lime juices and half a teaspoon of salt. Stir until all the ingredients are combined and serve it to your family and friends alongside chips, crackers or sliced veggies!
BONUS GUACAMOLE TIP KEEPS YOUR DIP FROM TURNING BROWN:
Save one of the avocado seeds being careful not to touch it with your hands. I use a plastic bag as a “glove” to handle it. Once your Guacamole is prepared, push the seed down into the dip so it is covered or almost covered by the Guacamole. Cover the bowl with plastic wrap, and it will stay fresh and green for up to 48 hours! This really works! I do it all the time to save leftover Guac. Well, when there is any leftover Guac. 🙂
- 2 Avocados
- 1 cup chopped Cilantro
- 1/2 cup finely chopped Red Onion
- 1 seeded and finely chopped Jalapeno
- 1/2 tsp Salt
- 1 tsp Lemon Juice
- 2 tsp Lime Juice
- Peel and pit avocados.
- Add juices and mash avocados with a fork.
- Stir in remaining ingredients and mix well.
