Sweet Potato Souffle
Ingredients
- 3 cups mashed sweet potatoes
- 3/4 cup white sugar
- 1/3 cup butter, softened
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup flaked coconut
- 1/3 cup all-purpose flour
- 1 cup packed brown sugar
- 1 cup chopped walnuts
- 1/3 cup melted butter
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Combine the mashed sweet potatoes with the white sugar, soft butter or margarine, beaten eggs, vanilla and milk. Spoon into a 2 quart oven proof baking dish.
- Combine the coconut, flour, brown sugar, chopped nuts and melted butter. Sprinkle over the top of the sweet potatoes.
- Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes.

Green Bean Casserole
Ingredients
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon white sugar
- 1/4 cup onion, diced
- 1 cup sour cream
- 3 (14.5 ounce) cans French style green beans, drained
- 2 cups shredded Cheddar cheese
- 1/2 cup crumbled buttery round crackers
- 1 tablespoon butter, melted
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
- Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
- Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.

Mashed Potatoes
Ingredients
- 5 pounds unpeeled red potatoes, quartered
- 13 ounces butter, room temperature
- 5 ounces Romano cheese, grated
- 1/4 cup and 2 teaspoons chopped garlic
- 2-1/2 teaspoons salt
- 2-1/2 teaspoons dried oregano
Instructions
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 45 minutes; drain.
- Stir in butter, cheese, garlic, salt and oregano.
- Mash with a potato masher or with an electric mixer.
