Oh! That Girl Scout Cookie time of year! It doesn’t come around often enough, does it? The kids will be thrilled to know that we can now have an unlimited supply of Girl Scout Thin Mint Cookies!

You’ll be shocked at how easy it is to make your own Thin Mint Cookies. That could be just a little bit dangerous!

You can cream the butter and sugar by hand but it’s much faster — and less tiring — if you use the hand mixer 🙂

Don’t whisk the dry ingredients too vigorously or you’ll have them all over the counter instead of in the bowl. Yes, I’m speaking from experience!

You can unwrap the dough to slice it, or leave it wrapped and undo it as you place the circles on the parchment paper.

Make sure to give the cookies space to expand while they cook.

You could eat these right out of the oven but then you’d miss out on dipping them in that yummy melted chocolate!
