Old El Paso makes dinner quick, easy and delicious!
We all have those busy days when you just don't feel like cooking. Don't blow your food budget on take out! Having items on hand to make a quick and easy dinner is one way to keep your food budget under control.
Our family accepted the challenge to take traditional taco ingredients and transform them into a dinner that goes “Beyond Tacos.” Here is the delicious meal we made…
Beyond Tacos Meal
- Mexican Lasagna
- Homemade Salsa
- Tortilla Chips
- Homemade Guacamole
- Corn Cake
- Garnishes: Sour Cream, Sliced Black Olives, Old El Paso Jalapenos
Mexican Lasagna
You will need:
- 1-2 lbs prepared Taco favored ground beef (made with Old El Paso Taco Seasoning Mix)
- Old El Paso Flour or Corn Tortillas (which ever your family prefers), 1 package
- Old El Paso Enchilada Sauce, 1 can
- Old El Paso Refried Beans, 1 can
- Shredded Cheese (cheddar or Mexican blend), about 2 cups
Layer ingredients into a sprayed 9×13 baking dish. You can arrange them in any order, but this is the order I used: Taco flavored ground beef, tortillas dipped in the enchilada sauce (dip each tortilla individually as you place them into the baking dish), refried beans, seasoned ground beef, shredded cheese, tortillas dipped in enchilada sauce, more seasoned ground beef, final layer of tortillas dipped in enchilada sauce, final layer of shredded cheese, scatter black olives on top.
Bake in 350 degree oven about 25 minutes or until heated through and all cheese is melted on top.
This entire Mexican Lasagna can also be assembled ahead of time and kept in the refrigerator until ready to cook.
Our Old El Paso Gift Pack also included some festive serving trays!
- The chip & dip tray is quite large measuring 15″ square. As you can see, it makes quite a presentation for otherwise “ordinary” chips and salsa.
- The rectangular tray measures 19″ x 8″. I placed containers of salsa and guacamole on mine for this meal, but it could also be used for so much more including serving bread or even as a centerpiece!
