
This is one of our go-to last minute dinner ideas.
My hubby will often call on his way home to find I have no plan for dinner! {gasp!}
Sometimes he will run in a grocery store and pick up a couple of rotisserie chickens and bags of Caesar Salad. Viola! Chicken Caesar Salad!
Here are some more ideas for using a rotisserie chicken to make a quick family meal.

Mexican Tingas
Prep Time: 10 Min
Cook Time: 25 Min
Ready In: 35 Min
Servings: Makes 16 Tingas
Ingredients:
- 2 tablespoons olive oil
- 1 (15 ounce) can stewed tomatoes
- 1 large onion, cut into rings
- 1 (7 ounce) can chipotle peppers in adobo sauce, or to taste
- 2 pounds shredded cooked chicken meat
- 16 tostada shells
- 1/2 cup sour cream
Directions:
- Heat olive oil in a saucepan over medium heat.
- Add the onions; cook and stir until softened and translucent, about 5 minutes.
- Meanwhile, puree the tomatoes with chipotle peppers and adobo sauce to taste.
- Pour into the onions, and add chicken. Cover, and simmer for 20 minutes.
- To serve, mound the chicken onto tostada shells, and garnish with a dollop of sour cream.

Easy Chicken Enchiladas
Prep Time: 20 Min
Cook Time: 30 Min
Ready In: 50 Min
Servings: Serves 6
Ingredients:
- 1 (8 ounce) package cream cheese
- 2 cups chopped cooked chicken breast meat
- 1 cup salsa
- 1 (15.5 ounce) can pinto beans, drained
- 6 (6 inch) flour tortillas
- 2 cups shredded Colby-Jack cheese
Directions:
- Preheat the oven to 350 degrees F (175 degrees C).
- Lightly grease a 9×13 inch baking dish.
- In a small saucepan over medium heat, combine the cream cheese and salsa.
- Cook, stirring until melted and well blended.
- Stir in chicken and pinto beans.
- Fill tortillas with the mixture, roll, and place into the prepared baking dish.
- Spread cheese over the top. Cover with aluminum foil.
- Bake for 30 minutes, or until heated through.
- Garnish with your favorite toppings such as lettuce and tomatoes, or sour cream.

House Fried Rice

Servings: Serves 8
Ingredients:
- 1 1/2 cups uncooked white rice
- 3 tablespoons sesame oil
- 1 small onion, chopped
- 1 clove garlic, chopped
- 1 cup small shrimp – peeled and deveined
- 1/2 cup diced ham
- 1 cup chopped cooked chicken breast
- 2 stalks celery, chopped
- 2 carrots – peeled and diced
- 1 green bell pepper, chopped
- 1/2 cup green peas
- 1 egg, beaten
- 1/4 cup soy sauce
Directions:
- Cook rice according to package directions.
- While rice is cooking, heat a wok or large skillet over medium-high heat.
- Pour in sesame oil and stir in onion. F
- ry until golden, then add garlic.
- When garlic is lightly browned, mix in shrimp, ham, and chicken.
- Fry until shrimp is pink.
- Lower heat to medium and stir in celery, carrot, green pepper, and peas.
- Fry until vegetables are crisp-tender.
- Stir in beaten egg and cook just until egg is scrambled and firm.
- When rice is done, mix thoroughly with vegetables and stir in soy sauce.
- Adjust seasoning to your preference and serve immediately.
