Two Easter Cake Ideas

Today we have two Easter cake recipes for you from my own kitchen!  Both are pretty simple to make.

Coconut-Cake-Dressed-Up-for-Easter

First up is my Mom’s Coconut Cake.

This was my favorite growing up. I’d often request my Mom to make one of these for my birthday or to take to a church dinner.

This year I made this cake for my family at Easter. I colored the coconut green to look like Easter grass and decorated it with little jelly beans and pink bunny Peeps. My daughter loved this project!

Mom’s Coconut Cake

Ingredients:
  • Ingredients for Cake
  • 2 cups self-rising flour
  • 1 1/4 cups sugar
  • 1/2 cup shortening
  • 3/4 cup milk
  • 2 eggs for yellow cake, or 3 egg whites for a white cake
  • 1 tsp vanilla or coconut flavoring[br]
  • Ingredients for Seven Minute Frosting
  • 2 egg whites, unbeaten
  • 5 Tbs water
  • 1 1/2 cup sugar
  • 1 1/2 tsp white syrup (like Karo Syrup)
  • 1 tsp vanilla or coconut flavoring
Cake Instructions:
  1. Grease & flour 2 round cake pans.
  2. Heat oven to 350 degrees.
  3. Stir together flour and sugar. Add shortening and slightly over half of the milk. Blend till well mixed.
  4. Add remaining milk, eggs, and flavoring. Blend with a mixer for 2 minutes.
  5. Pour batter in equal parts into pans and bake 25-30 minutes.
  6. Let cake cool about 10 minutes in pans before removing.
  7. Remove from pans and allow to cool completely before frosting.
Frosting Instructions:
  1. Combine ingredients in top of double boiler.
  2. Tip: If you don’t have a double boiler, you can put water in a large skillet and place ingredients in a smaller boiler and place in skillet with ingredients in the boiler.
  3. Boil water in the bottom boiler (or skillet) at a steady boil. With a mixer, beat ingredients in top boiler while cooking for 7 minutes or until frosting will stand in peaks. (Be careful with this step! This should be done by an adult.)
  4. Add flavoring and mix well.
  5. Spread between layers of cake, then sprinkle with coconut. Frost sides and top of the cake and sprinkle with coconut.
  6. Optional: Coconut can be dyed with green food coloring to look like grass. Cake can be decorated with jelly beans (to look like Easter eggs) and bunny or chick-shaped Peeps. Makes a great Easter dessert!

Bunny Cakes

This is not really a special recipe but more of a fun decorating project.

You can use any kind of cake you want. Pictured are a few of the Bunny Cakes our family has made over the past few years.

The kids love to “help” me decorate these. I learned years ago to stay out of their way and just let them be creative. How can you really mess up candy on a cake, right?

 

Bunny Cake

Ingredients:
  • Prepare any cake recipe or mix from a box and cook in 2- 8 or 9 inch round pans.
Instructions:
  1. Let the cake cool, then cut according to the diagram below.
  2. Arrange cake pieces as shown in the diagram, then frost all pieces.

  3. Alternate arrangement: One year we used the “bow tie” piece as a bow to make our bunny a girl (this was my daughter’s idea, of course!).
  4. Apply candy decorations as desired. Have fun!
