These are the cutest Santa Hat Meringues you’ll ever eat! They’re almost too cute to eat…almost.

Ingredients

  • 4 Egg Whites (at room temperature)
  • 2 1/2 cups Powdered Sugar
  • 1/2 tsp Cream of Tartar
  • Red Gel Food Coloring
  • 10 Mini Marshmallows

Instructions

  1. Place parchment paper on 2 cookie sheets.
  2. Preheat oven to 200 degrees.
  3. Whip the egg whites at high speed until stiff peaks form.
  4. Gradually add in the powdered sugar about 1/2 cup at a time while whipping on high (scrape down the sides periodically).
  5. Add in the cream of tartar and whip briefly to blend.
  6. Use a round tip in the piping bag and transfer 1/4 of the mixture to the piping bag.
  7. Pipe about 1″ circles to form the base of each hat.
  8. Add in red food coloring to the rest of the batter and whip until the desired color is reached and blended.
  9. Use a star tip and transfer the mixture to another piping bag.
  10. Pipe in a circular motion making smaller circles as you go upward (like soft-serve ice cream).
  11. Bake the Santa Hat Meringues for 2 hours.
  12. Turn off the oven and leave meringues in with the door slightly open for 1 more hour.
  13. Cut each marshmallow into fourths.
  14. Make a “glue” to attach the marshmallows to the tips of the hats by mixing 1/4 cup powdered sugar with several drops of water and mixing well.
  15. Gently dab this on with a toothpick and press marshmallow in place.
